Note that there are lots of ways to enjoy eggs and this is just one! Feel free to try poached eggs in place of the fried eggs in this recipe – both are equally delicious.
- 2 eggs
- 2 pieces of bread (or 1 big one)
- 1/3 avocado, sliced
- 4 tomato slices
- 1 lg handful of lettuce
- Salt and pepper to taste
Fry eggs with lots of pepper according to your taste buds (I like over easy the best!). Meanwhile, toast bread and slice both avocado and tomatoes.
To assemble spread avocado slices over the toast, the top with tomatoes, lettuce and finally eggs.
