Christmas (Mediterranean) Quiche:
- 20 tart shells
- 2 large stems of broccoli, broken in tiny florets
- 3T OR 20 strips of sun dried tomatoes
- 1/2 c feta, crumbled
- 2-3T fresh basil, ripped into pieces
- 5 eggs
- 1/2c milk (of choice)
- salt and pepper to taste
Fill each tart shell with a broccoli floret, 1 slice of sun dried tomato, feta, and a piece of basil.
In a bowl, mix together eggs, milk, salt, and pepper. Pour a spoonful of egg mixture into tart shells until full but not overflowing. Bake at 350 degrees for 25-30 min or until centers are puffy and edges are browning.
