Spring has finally sprung! I think everyone is happy to FINALLY have a week with some heat in the line-up! Weather like this adds a little jump in my step and get’s me itching for some fresh recipes. It will still be a while till the soil turns out fresh ingredients, but that doesn’t have to stop us from adding a new flare to our menu.
My line up this week:
You can see my need to get out BBQ’ing and in general to have some fresh recipes that don’t all need to be hot. I did buy a bunch of fresh parsley and cilantro this week which can be a risk as they go bad quickly. So to use everything up, I plan to use the parsley in:
- 1/2 in the tomato cucumber salad
- 1/4 in the veggie frittata
- 1/4 in the sun-dried tomato chicken burgers
As for the cilantro, I plan to use it in:
- 1/2 in the three sisters burritos
- 1/2 in taco salad
Without diving into full recipes, here are a few details on the menu. Koftas = a spiced, ground meat ball. Essentially these are burgers and are part of many cuisines from Greek, Turkish, Pakistani, or Indian. Mixing this with a fresh tomato and cucumber salad pairs well and everything can of course we eaten with a heavy side of garlic hummus. The Three Sisters Burritos is a recipe I have adapted from a cookbook called “Rebar” (my absolute favourite cookbook) which calls for squash, corn, and beans. I use sweet potatoes, black beans, and corn with lots of chili spices rolled in a tortilla shell with a heavy side of salsa. Finally Taco Salad is a staple for us and consists of a variety of layers which can vary depending on what we have around – lettuce (typically romaine), ground-spiced meat, black bean and tomato salad, cilantro, salsa, guacamole, sour cream, and cheese. We pile everything we’ve got onto the plate and then dig in.
