Warm Spicy Black Bean Chipotle Tacos
- 1 large red pepper, sliced
- 1 bunch of green onions, sliced
- 1 large carrot, julienned
- 1/2 recipe of chipotle black bean dip*
- Grated cheese
- Chopped cilantro
- Lime wedges

Warm tortilla shells in the oven while preparing other ingredients. Fry all vegetables in a pan until crunchy.
To assemble, spread a generous spoonful of chipotle dip on each tortilla shell followed by a scoop of veggies. Add salsa, cheese and cilantro, if desired. Enjoy!
